Ingredients:

1 ½ pound sausage kielbasa or smoked sausage, sliced ¼″ thick

2 pounds baby creamer potatoes, washed, sliced in half

2 15 ounces cans of green beans, drained

⅛ c vegetable oil

¼ c butter

1 c onions, chopped

3 cloves garlic, minced

1 teaspoon Slap Ya Mama® seasoning

1 teaspoon garlic powder

1 teaspoon pepper

½ teaspoon red pepper flakes

¼ c water

Directions:

Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.

Step 2: Apply cooking spray in a 9×13-inch baking dish.

Step 3: Slice the clean potatoes into two, then place them into a resealable bag.

Step 4: Add the seasonings, oil, red pepper flakes, and pepper. Shake the bag until well mixed.

Step 5: Place a large frying pan on the stove and turn the heat to medium-high.

Step 6: Add water and sausage, then cook for a few minutes until brown.

Step 7: Remove the cooked sausage and set it aside to cool.

Step 8: Add the cooled sausage inside the bag with the seasonings.

Step 9: In the same pan, add butter and allow it to melt.

Step 10: Add garlic and onions. Sauté for a few minutes until aromatic and soft. Remove from the heat.

Step 11: Add the cooled onion and garlic into the bag. Shake until well mixed.

Step 12: Add the green beans and shake until well mixed.

Step 13: Transfer the mixture into the baking dish and spread it evenly.

Step 14: Cover the baking dish with foil.

Step 15: Place it inside the preheated oven and bake for 40 minutes or until done.

Step 16: Remove from the oven and allow it to cool for a few minutes.

Step 17: Serve and enjoy!

  • 2 lbs baby creamer potatoes, washed, sliced in half, or golden potatoes shopping list
  • 2 15 oz cans green beans, drained shopping list
  • 1/8 cup vegetable oil, olive oil shopping list
  • 1/4 cup butter, always the real thing shopping list
  • 1 cup onions, chopped shopping list
  • 3 cloves garlic, minced shopping list
  • 1 tsp Slap Ya Mama® Cajun seasoning, includes onion, paprika, salt, white pepper, it may also have cayenne, turmeric, and herbs such as oregano and thyme shopping list
  • 1 tsp garlic powder shopping list
  • 1 tsp pepper shopping list
  • 1/2 tsp red pepper flakes shopping list
  • 1/4 cup water shopping list

How to make it

  • Preheat oven to 400° and spray a 9x13 baking dish with a non stick spray.
  • Wash creamer potatoes, cut in half and add to a sealable gallon size baggie.
  • Add oil, seasonings, pepper and red pepper flakes to baggie. Shake to coat.
  • In a large frying pan, add sausage and water and cook over medium high heat until sausages have browned and most of water has evaporated.
  • Remove sausage from pan and when cool enough add to baggie.
  • Melt butter in frying pan and add onions and garlic, cook until onions are translucent.
  • Let cool for a few minutes and then when cool enough, add to baggie and shake to mix.
  • Lastly, add green beans to baggie, shake to mix and then empty contents into prepared baking dish.
  • Cover with foil and place in the oven. Bake for 40 minutes or until potatoes are tender.
  • Carefully remove from oven and enjoy!

    Tips for making this sausage green bean potato bake

    • I like to use both red and white baby creamer potatoes. But if you only have one or the other then it's no problem.
    • I use smoked sausage, but chicken sausage, kielbasa, or even chorizo would also be delicious in this dish.
    • It's not absolutely necessary to brown the sausages before baking. I just like to add that little bit of caramelization to the sausages. If you want to skip that step you sure can.

    Can I use fresh green beans?

    Yes, you can use fresh-cut green beans or even frozen. Just make sure to thaw the frozen green beans out beforehand.

    Ingredients

    • 1 1/2  13.5-14oz fully cooked smoked sausage
    • 1 pound baby creamer potatoes (I use a mixture of red and white)
    • 2- 15 oz cans green beans, drained
    • ½ onion roughly chopped
    • 6 garlic cloves minced
    • 2 tablespoons olive oil
    • 1 tablespoon Italian seasoning
    • 1 1/2 teaspoons salt (more to taste)
    • 1 teaspoon black pepper
    • ½ teaspoon red pepper flakes
    • Fresh chopped parsley

    Instructions

      1. Preheat oven to 425 degrees
      2. Slice the smoked sausage into ¼ inch thick slices. Heat a skillet on medium-high heat, add the sliced sausages and cook for 2-3 minutes to brown them.
      3. Wash the baby potatoes and slice in half. (If they are extra-large you may need to cut them into quarters.)
      4. In a bowl add the sausage, potatoes, green beans, onions, garlic, olive oil, Italian seasoning, salt, pepper, and red pepper flakes and toss until coated.
      5. Spray a 9x13 baking dish with non-stick cooking spray. Pour contents into the baking dish. Place on the center rack and bake for 40-45 minutes or until potatoes are tender, stirring halfway through.
      6. Remove from oven and add more salt and pepper if desired.
      7. Garnish with fresh chopped parsley!

    Notes

    You can use fresh or frozen green beans if desired. Just thaw frozen green beans beforehand.
