This is an easy, versatile recipe that you can make on the stove top when in a hurry or put it in the crock pot or slow cooker and let it cook dinner while you do something else. It makes a great main dish anytime.  Try our recipe for fried cornbread to go with it and you have a comfort food meal everyone will love.  You could easily double this recipe and it keeps well refrigerated for several days.

You can’t go wrong with this sausage, green beans & potatoes at any meal.

1 pound smoked sausage (can use Polish sausage, turkey sausage, Andouille sausage)

4 cups frozen green beans or fresh green beans or 2 (15 ounce) cans

1 (14.5 ounce) can beef broth

2 cups water

3 to 4 large potatoes, peeled or unpeeled and cut up (can use russet or red potatoes)

1 large onion, peeled and cut in rings

1 teaspoon minced garlic

1/2 teaspoon salt or to taste

1/2 teaspoon black pepper

2 teaspoons bacon drippings (Optional)

Combine all ingredients and place in 3 quart crock pot or a pan on top of the stove.  Cook in crock pot on low for 5 to 6 hours or high for 4 hours or until the potatoes are done.  Cook on stove top until potatoes are done about 45 minutes to an hour.  Makes 6 to 8 servings.  Enjoy!

Note:  I usually brown my sausage and onion in bacon drippings on top of the stove before putting in crock pot.  It just adds some extra flavor to this dish but it is not necessary to do so.  We love lots of extra black pepper added before serving, too.
