Keto broccoli chicken casserole with cream cheese and mozzarella

This cheesy keto chicken broccoli casserole is an easy and delicious keto dinner recipe, with less than 5g net carbs per serving!

Sauté broccoli in butter, until bright green and just tender, about 4 minutes. Remove the broccoli to a bowl.

Melt the remaining butter with garlic and cook for 1 minute. Add the cream then simmer until reduced by about half, 3 to 5 minutes.

Stir in ½ cup of the mozzarella and all of the Parmesan until melted. Season with salt and pepper.

Stir in the chicken and the broccoli.

Top with the remaining mozzarella cheese.

Broil in the oven until the cheese starts to brown, 2 to 5 minutes.

Keto broccoli chicken casserole with cream cheese and mozzarella

  • 9 oz fresh broccoli florets
  • 4 oz cream cheese
  • 1/3 cup sour cream
  • 1/2 cup heavy whipping cream
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup shredded mozzarella cheese divided
  • 1/2 cup Parmesan cheese
  • 3 cups cooked chicken breast chopped

  • Preheat oven to 400° F.

  • Place broccoli in a large bowl with 1-inch water. Microwave on HIGH for 14 minutes or until broccoli is tender. Drain water from broccoli; set aside.

  • In a large nonstick skillet over medium heat, heat cream cheese, sour cream, heavy cream, and Dijon mustard until melted and thoroughly combined. Stir in garlic powder, salt, and pepper. Add 1/2 cup mozzarella cheese and Parmesan cheese. Stir until melted. Remove from heat and stir in chopped, cooked chicken breast and drained broccoli.

  • Transfer mixture to an 8- x 8-inch baking dish. Sprinkle top with remaining 1/2 cup mozzarella cheese.

  • Bake at 400° for 15 minutes or until cheese is melted and lightly browned.
